
Yamini Walia talks to Ondrej Pospichal about his bartending style and his trip to India as part of the Grey Goose Beyond the Bar programme
Tell us about your association with the Grey Goose Beyond the Bar programme?
This fantastic programme, which Grey Goose has designed, is in its second year and I am extremely happy to be the face of this year. Sharing knowledge and expertise with the Indian bar industry is a very fulfilling experience.
Is this your first trip to India? What are you looking forward to the most?
Yes, this is my first time. The Grey Goose Beyond the Bar programme took place in three cities (New Delhi, Mumbai and Bangalore) and I was extremely excited to try the local food and see the craft and creativity that defines the bars.
Are there any notable differences between the bar industry in India and abroad?
Of course there are. These days, we tend to look for exotic drinks and because of social media and its worldwide reach, we forget what our own country has to offer. My aim this year was to show local bartenders what is literally under their nose and how they can use it!
In terms of your career, what would you say has been your biggest achievement?
My biggest achievement is the fact that I succeeded in London at the epicentre of the cocktail culture.
How would you define your bartending style? What do you think sets you apart from the rest?
My style is simple, straightforward and incorporates Asian influences. I work with the best ingredients and with local and seasonal produce. What sets me apart is the fact that bartending is not only about creating cocktails, but also tending to the bar, which includes attending to several things even before you open the door.
What suggestions/ tips would you like to give to aspiring bartenders?
I would like aspiring bartenders to study and work on themselves in their free time and be determined. More so, they need to stay focused, be humble and help others.
What are your future plans?
London is great, but I love travelling, motivating people and helping them grow. So, any type of role in future is possible, especially in Asia, primarily Japan.
