This is your time to catch the King of fruits before it bids a seasonal farewell.  We bring you a slice of tropical paradise with mango recipes by Executive Sous Chef Lokesh Jarodia, Novotel Imagica, Khopoli. For those adventurous enough fire up the BBQ, juice up these savouries with refreshing specials.

Kacche aam aa mahi


Fish        180gms

Raw mango        100gms

Whole jeera       10gms

Whole red chilli                 5gms

Turmeric powder             5gms

Jeera powder    5gms

Red chilli powder             3gms

Salt         3gms

Onion    200gm

Tomato                80gms

Oil           10ml

Mustard seed    2gms

Sugar     10gms

Coconut milk      15ml

Garam masala   2gms


 1             Heat oil in a pan and add in the mustard and fenugreek seeds. Let the mustard seeds splutter. Add ginger and green chillies.

2              Add the onions and fry till soft.

3              Make a paste adding water to the turmeric, red chilli and coriander powders, in a cup.

4              Add the paste, tomato and salt to the pan. Sauté for a couple of minutes. Add in the mangoes and a cup of water. Let it come to a boil.

5              In the meantime, grind coconut with half a cup of water; to a smooth, fine paste. Add it to the pan.

6              Add in the fish pieces and let the curry simmer for 10-12 minutes on medium flame. Turn off the gas­­ and let it rest for 15 minutes before serving.

Karri Murgh Tikka


Chicken leg boneless 180gms

Raw mango 100gms

Ginger 10gms

Garlic 10gms

Green chilli 8gms

Salt  5gms

Turmeric powder 5gms

Garam masala 2gms

Jeera powder 5gms

Lemon  10gms

Besan 20gms

Egg 1no

Mint 15gms

Coriander 20gms

Curd 100gms


1  Make the marinade by mixing all the ingredients. Boil the mangoes and make a puree of it.

2  Now add chicken and keep it overnight.

3  Arrange marinated chicken in skewer and cook it in tandoor. Serve it hot.

Refreshing mango whip


1 cups mango chunks, frozen

1/4 teaspoon ginger, grated

2 tablespoons white sugar

2 to 3 tablespoons heavy whipping cream


1 Place all ingredients into a blender.  Mix until smooth.

2 Remove blender from base and using a spatula, scrape sides, bringing all of the ingredients back into  the blender  base. Continue blending until all of the ingredients are smooth.

3 Pour it a glass and garnish with a mango slice.

Mango kiwi cooler


3 oz mango concentrate

4 oz water

2 oz grenadine

2 oz kiwi juice Ice cubes

1 mango slice for garnish


 1 Mix together mango concentrate with water, to desired sweetness.

2  Sit in the grenadine and kiwi juice with ice cubes.

3  Garnish with a slice of mango and enjoy.
